Ramen One entered 91大黄鸭's crowded marketplace with a soft opening in March, and, after some menu tweaks, is now officially up and running as of May 1.
Described as "a new concept of ramen" in its social media, Ramen One's signature dish is a "flavourful soy-milk broth and authentic Hakata noodles," according to an email to V.I.A. They're located at 433 W Broadway near the intersection with Yukon Street.
"We're excited to share this unique culinary experience with our guests," states manager Sairi Miyagui in the email.
Ramen One initially positioned itself as being home to $10 ramen, however, with their grand opening menu on offer, they have upped the prices across the board. A basic bowl of shoyu broth vegetarian ramen is $11.95, and one sole $10 option is the "spring onion oil noodle," listed as another main, and not with the ramen.
Ramen One's signature ramen broth is made with soy milk, and bowls are priced at $15.95. A new addition post-soft opening phase is that when ordering a la carte, diners can customize their noodle texture.
Combos (with hot or cold tea and your choice of side) will further drive up the price. Sides include a selection of onigiri or takowasabi (sliced cold marinated octopus with wasabi).
Another draw for customers may be the seating arrangement, which prioritizes privacy. The setting is similar to a bar with dividers that can be removed if guests want to talk to the person next to them. Booths feature a buzzer to call the server, individual water dispensers, condiments, and a curtain through which the kitchen passes trays.
Ramen One is entering a neighbourhood full of similar restaurants. Along the same stretch of West Broadway is Menya Rizo, Menya Juemon, Hokkaido Ramen Santoku and Ramen Yaguchia (which operates out of Kamei).
Ramen One's West Broadway home was a Subway sandwich franchise until work on the Broadway subway and rising rent .
